Chaumes le Cremier
A beautiful, soft and gooey cheese made in the Pyrenees style of a Mont D'or or Vacherin. The pate of this cheese can be eaten directly, as tradition would suggest, from the box of a ripened version. a truly authentic cheese produced in the Dordogne region.
A popular way to enjoy Chaumes Le Cremier is baked, fondue style - an old swiss technique. Quite simply, thinly slice some garlic, cut the top of the cheese and fold it back like a flap, then drizzle in some white wine, a touch of thyme and the garlic.
Put it in the oven for twenty minutes or so and enjoy with potatoes, mushrooms, fresh crusty bread or vegetables.
