Orecchiette originates from Puglia in Southern Italy, and is a traditional pasta shape similar to strascinate which is a little flatter. Traditionally made Orecchiette uses durum wheat semolina, flour and water. The dough is well kneaded, then the pasta is cut by hand and formed by thumb in a process that is quite difficult to perform correctly. As Puglia is one of Italy's largest producers of Olive oil, orecchiette is typically served with fruity robust olive oil, simple vegetables and a good, salty pecorino cheese such as ricotta salata. Orecchiette are shaped roughly like small ears, hence the name (orecchio, ear, orecchiette, little ears).
