Parmesan, Antica Formaggeria, Grana Padano, 18 mth, 2 kg

[Stock Code: 1484]

Grana Padano originates from the fertile northern plains of Italy, stretching from Bologna all the way up to the foothills of the North Italian Alps. Its history is firmly grounded in Italian culture, with records dating back to around the 11th Century. One of the unique features about this cheese is that the recipe has barely changed in 10 centuries. There are two types of "grana style" cheese made in Italy. First is Parmigiano Reggiano, which is made from raw milk and almost exclusively South of the Po River. The other is Grana Padano which is very similar to Reggiano but made exclusively in the geographical boundaries as set out in European and Italian Law. Virtually all grana is made North of the Po River, in 32 provinces over 5 regions, including Piemonte, Lombardia, Veneto, Trento and some parts of Emilia Romana In Australia, Grana Padano outsells Parmigiano Reggiano by a very large margin, and infact Grana Padano is now the number one selling cheese in the world. In 1955 Grana Padano and Parmigiano Reggiano were recognised as two distinct cheeses by putting in place laws by which these cheese could be made according to location, milk processing, production techniques and quality controls. To quote from the Grana Padano Consortium web site "Consorzio per la Tutela del Formaggio Grana Padano has a broad range of powers to inspect and supervise producers, maturers, packagers and retailers in order to ensure that the processes never jeopardise the authenticity and goodness of this D.O.P. product. These checks are carried out without any prior warning and in serious cases, the Fraud Squad and Anti-sophistication authorities may be called in." This product is a random weight product and therefore, the weight and the amount will only be available once the goods are shipped. A representative from Kirkfood will ring to confirm these totals prior to despatch.
