It's that time of the year again, I said to Mum..."Mum, you should put that glazed ham recipe up on the internet and share it around", the response was, "Oh I wouldn't know how to do that! Who wants to use my recipes anyway?" Ah, sorry Mum, but you are asked every year to do peoples hams for them, I think it's time they started to do it themselves. So with Mum's permission I have scanned it in (for authenticity) for everyone to enjoy. Mum has 2 recipes but the one we use is Glaze number 1 with the Mustard Fruits variation to it. For the record, Dad actually does the glaze under Mums strict supervision, and the old boy has a few secrets of his own... "You need a high (plump) Leg with a good layering of fat, NOT a long skinny leg as it will dry out during the glazing process". Every year, Mum and Dad have been glazing the ham, often they will do the glaze a couple of days before Christmas to give the mustard fruits and Cider time to infuse into the fat. Thanks Mum.
I was given this recipe by Matt 5 or 6 years ago. It is fabulous! I just went to find it and discovered I had lost it...Arrrgggh what a thought! Off to the net I went & as I thought it would be, there it was in the blogs! Good work Kirkie's. Yum, a glazing I will go.
