As a young cheese the flavour is mild for a washed rind but, during the ageing process St Albray will develop into a cheese with quite a robust character. The unique flower shape of the St Albray wheel allows a cut of each "petal" to be around 250 grams. Serve Saint Albray on a cheese board, garnish with walnuts, white grapes and walnut bread, best accompanied with a perfumed red wine such as Bourgogne or Medoc.
