Can you tell me a bit about Taleggio cheese?

Taleggio DOP is controlled by Consortium of Taleggio Producers, and is protected by law (Denomination of Origin Protected).  Only cheese makers within the specified geographic area who follow particular methods of production are permitted to use the name Taleggio and the consortium’s trademark.

The rind is smooth and thin with a rosy, light brown colour with some grey and light green sage colour mould.  The cheese is tender and supple, with a light straw to white colour.  The aroma is mild when young but becomes quite pungent when mature.  The flavour is sweet and fruity, with a slightly sour tangy taste, sometimes with a truffle aftertaste, but you can certainly taste the characteristic flavour of the milk.
