&lt;p&gt;The Spaniards have been curing ham (Jamon Serrano) for centuries and there is evidence of the practice being carried out dating back to the reign of the Roman Empire.
&lt;/p&gt;
&lt;p&gt;Quite simply, Jamon Serrano is the product of 3 ingredients - Pork, Salt and time.
  &lt;br /&gt;Traditonally, Jamon Serrano was processed in Mountain areas (Serrano translates loosely to &quot;from the mountain/s&quot;) where the climate would be moderate.
&lt;/p&gt;
&lt;p&gt;Jamon Serrano can now be classified under the TSG (Traditional Specialty Guaranteed) which is a similar classification of production authenticity to AOC, DOC and DOP. Since 2000, Montesano has respected the traditional methods of Jamon production achieving and maintaining a TSG certificate for Jamon Serrano Gran Riserva and Jamon Serrano Riserva (Gold and Silver respectively). Basically, this assures you that the Jamon is &quot;the real thing&quot;.
&lt;/p&gt;
&lt;p&gt;The Montesano company that produces among others, Jamon Serrano, in order to maianitain their certification have a strict selection and curing policy which ensures you get a consistent, quality product every time.
&lt;/p&gt;
&lt;p&gt;Since 2006, kirkfood has been importing whole legs (boneless) of Jamon Serrano and Jamon Iberico from the Montesano Company in Spain. We are now importing the pre sliced, 150 gram version of Jamon Serrano to be enjoyed by consumers at good food retailers across Australia. The first shipment arrives early April.

  &lt;br /&gt;A classic cow&#039;s milk cheese hailing from the South West of France. This cheese literally translates as &quot;stubble&quot; and was inspired by the traditional Trappist cheeses of yesteryear. The distinctive golden yellow rind hides the pale creamy paste which belies the full bodied rich flavour.

  &lt;br /&gt;This cheese will become a deeper orange over time with the rind becoming sticker and more pungent. The rind is created by a regime of washing and brushing the cheese over a 2-3 week period by the cheese makers in carefully controlled temperature and humidity rooms.

  &lt;br /&gt;&lt;strong&gt;Texture:
  &lt;br /&gt;&lt;/strong&gt;Soft and springy with a smooth creaminess similar to Port Salute.
  &lt;br /&gt;The interior becomes creamier and softer with less pronounced &#039;eyes&#039; (holes) as it ages.
  &lt;br /&gt;Rind is slightly gritty, which becomes less so with age as it breaks down.
  &lt;br /&gt;
  &lt;br /&gt;&lt;strong&gt;Flavour:
  &lt;br /&gt;&lt;/strong&gt;When young fruitiness is balanced by a hint of herbal bitterness such as endive/ chicory. The rind has hint of smokiness
  &lt;br /&gt;As it ages the flvours become more pronounced. There is a hint of pine resin, nuts, medicinal herbs and a sweetness which shines through from the now soft spongy paste.
  &lt;br /&gt;
