Finally, an alternative to Maldon Salt!
For years, Maldon salt have enjoyed a practical monopoly in the crystal salt flake market. The fact that Australia is at the other end of the earth made this a pretty expensive but almost compulsory item in not just the restaurant larder, but every home cooks pantry as well. It's a great product, but now there is an Australian made product that in my opinion, out classes Maldon with its clean flavour while possessing the same flaky characteristics. Cheetham salt are now producing a product which at this stage, only comes in a 3.5kg foodservice pack. Production of this type of salt is labour intensive as well as time consuming, but as you probably know, crystal salt flakes are just superb for seasoning dishes.
