Lazy Chef of the year award

I find myself shaking my head in disbelief almost on a daily basis at how lazy some food professionals can be. I have to say, I'm becoming a big fan of the Chopping Block. It is amazing how some of these restaurant operators have survived in the game for so long. I think Matt Moran has been surprised as well. There is a lot of poorly trained cooks out there. Today, one of our clients ordered a roll of our all butter puff pastry. It is an excellent product made using only the finest Belgian butter from Corman. Anyway, this chef has an issue with the thickness of the pastry, according to him, it's too thick. I asked him did he have a rolling pin? He said no. Now, that surprised me, the fact that a chef does not have a rolling pin in his box of tools. I suggested improvise, use a wine bottle and just flatten it out to the thickness you want or run down to the supermarket and pick up a rolling pin for two bucks. His response was, "It's too hard, its too much work, I'll have to return it." It's no wonder this particular establishment has had no press at all, and god help them if they ever do have a reviewer turn up.
